  • 2 large eggplants
  • 1/4 cup all-purpose flour
  • 3 large eggs, beaten
  • 2 cups breadcrumbs

  • 2 cups shredded mozzarella cheese
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Slice the eggplants into 1/2 inch thick slices. Sprinkle with salt and let them sit for 30 minutes to draw out excess moisture.
  2. Rinse the eggplant slices and pat them dry with paper towels.
  3. Dredge each slice in flour, dip in beaten eggs, and coat in breadcrumbs.
