Summer Corn and Zucchini Chowder

A delicious summer chowder featuring fresh corn and zucchini, enhanced with the savory flavors of turkey bacon.

Ingredients

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 ears fresh corn, kernels removed
  • 2 medium zucchinis, diced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  2. Add olive oil to the pot and sauté onions and garlic until translucent.
  3. Stir in corn and zucchini, cooking for about 5 minutes.
  4. Add vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. Stir in heavy cream, salt, pepper, and paprika. Cook for another 5 minutes.
  6. Garnish with chopped bacon and serve hot.

Notes

  • Use fresh, in-season corn for the best flavor.
  • Feel free to substitute regular bacon if desired.
