Stuffed Plantains

A delightful recipe combining plantains with turkey bacon and chicken ham.

  • 2 ripe plantains
  • 4 slices turkey bacon
  • 4 slices chicken ham
  • 1/2 cup shredded cheese
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the plantains in half lengthwise and scoop out some of the flesh.
  3. Cook the turkey bacon until crispy, then chop into pieces.
  4. In a bowl, mix the chopped turkey bacon, chicken ham, shredded cheese, salt, and pepper.
  5. Stuff the mixture into the plantain halves.
  6. Brush the tops with olive oil.
  7. Place on a baking sheet and bake for 20-25 minutes until golden.
  8. Serve warm.

Notes

  • For extra flavor, consider adding some spices to the stuffing mixture.
