  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, pureed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, cream the butter and sugar together until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the creamed mixture alternately with the sour cream. Stir in the vanilla extract.
  6. Pour half of the batter into the prepared pan, then layer with the strawberry puree. Top with the remaining batter.
  7. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
