  • 4 cups vegetable broth
  • 1 can (14 ounces) coconut milk
  • 1 cup carrots, sliced
  • 1 cup bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 cups spinach
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and cook until soft.
  3. Add the garlic and red curry paste, cooking until fragrant.
  4. Pour in the vegetable broth and coconut milk, stirring to combine.
