- 1 pound red beans
- 4 cups chicken broth
- 1 cup onion, diced
- 1 cup green bell pepper, diced
- 1 cup celery, diced
- 4 cloves garlic, minced
- 8 ounces turkey bacon, chopped
- 8 ounces chicken ham, diced
- 2 teaspoons Cajun seasoning
- 2 teaspoons dried thyme
- 1 bay leaf
- 2 cups cooked rice
- Sort and rinse the red beans, then soak them overnight in water.
- In the slow cooker, combine soaked beans, chicken broth, onion, bell pepper, celery, garlic, turkey bacon, chicken ham, Cajun seasoning, thyme, and bay leaf.
- Cook on low for 6-8 hours, or until beans are tender.
- Stir in the cooked rice and let it heat through for about 10 minutes.
- Remove the bay leaf before serving.
Notes
- For a spicier dish, add diced jalapeños or hot sauce.
- If you like a thicker consistency, mash some of the beans before adding rice.
