Slow Cooker Red Beans and Rice

This slow cooker red beans and rice recipe features turkey bacon and chicken ham, creating a flavorful and hearty dish.

  • 4 cups chicken broth
  • 1 cup onion, diced
  • 1 cup green bell pepper, diced
  • 1 cup celery, diced
  • 4 cloves garlic, minced
  • 8 ounces turkey bacon, chopped
  • 8 ounces chicken ham, diced
  • 2 teaspoons Cajun seasoning
  • 2 teaspoons dried thyme
  • 1 bay leaf
  • 2 cups cooked rice

Instructions

  1. Sort and rinse the red beans, then soak them overnight in water.
  2. In the slow cooker, combine soaked beans, chicken broth, onion, bell pepper, celery, garlic, turkey bacon, chicken ham, Cajun seasoning, thyme, and bay leaf.
  3. Cook on low for 6-8 hours, or until beans are tender.
  4. Stir in the cooked rice and let it heat through for about 10 minutes.
  5. Remove the bay leaf before serving.

Notes

  • For a spicier dish, add diced jalapeños or hot sauce.
  • If you like a thicker consistency, mash some of the beans before adding rice.
