Slow Cooker Chicken Enchiladas

Delicious and easy slow cooker chicken enchiladas that make a perfect comfort food meal.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 can black beans
  • 1 cup corn
  • 2 cups enchilada sauce
  • 8 tortillas
  • 1 cup shredded cheese
  • 1 teaspoon cumin
  • 1 tablespoon chili powder

Instructions

  1. In a slow cooker, combine chicken, black beans, corn, half of the enchilada sauce, cumin, and chili powder.
  2. Stir well to mix all ingredients.
  3. Layer tortillas over the mixture, then add the rest of the enchilada sauce on top.
  4. Sprinkle cheese over the entire dish.
  5. Cover and cook on low for 4-6 hours.
  6. Serve warm, garnished with fresh cilantro if desired.

Notes

  • For added flavor, consider marinating the chicken beforehand.
