Rosemary Apple Cider Chicken

A delicious blend of rosemary and apple cider adds a juicy twist to this comforting chicken dish.

  • 4 chicken thighs
  • 1 cup apple cider
  • 2 tablespoons fresh rosemary, chopped
  • 2 cloves garlic, minced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Season chicken thighs with salt and pepper, then add to the skillet.
  3. Brown the chicken on both sides for about 5 minutes each side. Remove and set aside.
  4. In the same skillet, add onion and garlic. Sauté until onion is translucent.
  5. Stir in apple cider and rosemary, scraping up any browned bits from the pan.
  6. Return chicken to the skillet, and bring the mixture to a simmer.
  7. Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the chicken is cooked through.
  8. Serve warm with the cider sauce spooned over the top.

  • For best flavor, marinate the chicken in the apple cider mixture for a few hours before cooking.
