- 1 cup apple cider
- 2 tablespoons fresh rosemary, chopped
- 2 cloves garlic, minced
- 1 onion, sliced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Season chicken thighs with salt and pepper, then add to the skillet.
- Brown the chicken on both sides for about 5 minutes each side. Remove and set aside.
- In the same skillet, add onion and garlic. Sauté until onion is translucent.
- Stir in apple cider and rosemary, scraping up any browned bits from the pan.
- Return chicken to the skillet, and bring the mixture to a simmer.
- Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until the chicken is cooked through.
- Serve warm with the cider sauce spooned over the top.
