  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1/2 cup Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the cauliflower into florets and toss with olive oil, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes until golden brown.
  4. In a bowl, whisk together honey, Dijon mustard, Greek yogurt, and apple cider vinegar.
  5. Once the cauliflower is done roasting, let it cool slightly before combining with the dressing.
