One Pot Taco Rice

A delicious and simple one pot taco rice recipe perfect for a weeknight dinner.

  • 1 cup rice
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups beef broth
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned.
  2. Stir in taco seasoning and cook for another minute.
  3. Add the rice, beef broth, black beans, corn, and diced tomatoes to the pot.
  4. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes, or until the rice is cooked.
  5. Remove from heat and stir in shredded cheddar cheese before serving.
