Mini Apple Pies

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6 to 8 tablespoons ice water
  • 6 apples, peeled and sliced
  • 3/4 cup sugar
  • 2 teaspoons cinnamon
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, mix flour, salt, and sugar. Cut in butter until mixture resembles coarse crumbs.
  3. Stir in ice water, a tablespoon at a time, until the mixture comes together.
  4. Roll out the dough and cut into circles for mini pie crusts.
  5. In another bowl, combine apples, sugar, cinnamon, lemon juice, and cornstarch.
  6. Fill crusts with apple mixture and cover with remaining dough.
  7. Bake for 15-20 minutes until golden brown.

Notes

  • For a richer flavor, add caramel to the apple mixture.
  • These pies are best served warm with a scoop of vanilla ice cream.
