A delicious and refreshing take on the classic elote, this Mexican Street Corn Pasta Salad combines creamy pasta with sweet corn and zesty flavors.

Ingredients

  • 8 oz pasta of your choice
  • 1 cup sweet corn, roasted
  • 1/2 cup red onion, diced
  • 1 jalapeño, minced
  • 1/2 cup cilantro, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt to taste

Instructions

  1. Cook the pasta according to package instructions, drain and let cool.
  2. In a large bowl, combine the cooked pasta, corn, red onion, jalapeño, and cilantro.
