Mexican Chicken Casserole

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 12 tortillas, cut into strips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, salsa, chili powder, and cumin.
  3. Layer half of the tortilla strips in a greased 9×13 inch baking dish.
  4. Spread half of the chicken mixture over the tortillas, then half of the cheese.
  5. Repeat the layers with the remaining tortillas, chicken mixture, and finish with cheese on top.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
