Lemon Chicken Orzo Soup

A comforting and nutritious lemon chicken orzo soup that warms the heart and nourishes the body.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup orzo pasta
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 teaspoon dried thyme
  • 2 lemons, juiced
  • 2 cups spinach, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken breasts and cook until browned, about 5-7 minutes per side. Remove the chicken and set aside.
  3. In the same pot, add the carrots and celery. Cook for 3-4 minutes until softened.
  4. Pour in the chicken broth and bring to a boil.
  5. Add the orzo, thyme, and the chicken back to the pot. Cook for 10 minutes.
  6. Stir in the lemon juice and spinach. Cook for an additional 2-3 minutes until the spinach is wilted.
  7. Season with salt and pepper to taste before serving.
