- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts
- 4 cups chicken broth
- 1 cup orzo pasta
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon dried thyme
- 2 lemons, juiced
- 2 cups spinach, chopped
- Salt and pepper to taste
- In a large pot, heat the olive oil over medium heat.
- Add the chicken breasts and cook until browned, about 5-7 minutes per side. Remove the chicken and set aside.
- In the same pot, add the carrots and celery. Cook for 3-4 minutes until softened.
- Pour in the chicken broth and bring to a boil.
- Add the orzo, thyme, and the chicken back to the pot. Cook for 10 minutes.
- Stir in the lemon juice and spinach. Cook for an additional 2-3 minutes until the spinach is wilted.
- Season with salt and pepper to taste before serving.
