  • 1 cup Greek yogurt
  • 1/3 cup honey
  • 1 large egg

  • 1 teaspoon baking soda

  • 1 1/2 cups whole wheat flour
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mash the ripe bananas thoroughly.
  3. Add the Greek yogurt, honey, egg, and vanilla extract to the bowl and mix until combined.
  4. In a separate bowl, combine the baking soda, baking powder, salt, flour, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the muffin tin, filling each liner about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow muffins to cool before serving.
