Ginger-Scallion Chicken and Rice Soup

Ingredients

  • 1 pound chicken thighs
  • 4 cups chicken broth
  • 1 cup jasmine rice
  • 2 tablespoons fresh ginger, minced
  • 4 scallions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the sesame oil over medium heat. Add the chicken thighs and brown on both sides.
  2. Add ginger and garlic to the pot, and cook until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Reduce heat, add the rice, and simmer until rice is cooked.
  5. Stir in the soy sauce and sliced scallions, and season with salt and pepper.
  6. Serve hot, garnished with additional scallions if desired.
