Fall Pasta Salad

A delicious and colorful fall pasta salad featuring turkey bacon and chicken ham.

Ingredients

  • 8 ounces rotini pasta
  • 4 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced
  • ½ cup red onion, finely chopped
  • ½ cup black olives, sliced
  • ¼ cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions; drain and let cool.
  2. In a large skillet, cook the turkey bacon until crispy; let cool and crumble.
  3. In a large bowl, combine the cooled pasta, turkey bacon, chicken ham, cherry tomatoes, bell peppers, red onion, and black olives.
  4. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Feel free to add other seasonal vegetables.
  • Can be made a day in advance for enhanced flavors.
