Easy Weeknight Meatball Subs

Enjoy a quick and delicious family-friendly meal with these easy weeknight meatball subs.

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups marinara sauce
  • 4 sub rolls
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place the meatballs on a baking sheet and bake for 20 minutes or until cooked through.
  5. In a saucepan, heat the marinara sauce over medium heat.
  6. Add the baked meatballs to the sauce and simmer for 5 minutes.
  7. Toast the sub rolls in the oven for about 2-3 minutes.
  8. Assemble the subs by placing meatballs and sauce in the rolls, and top with mozzarella cheese.
  9. Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
  10. Serve warm and enjoy!

Notes

  • For extra flavor, add Italian seasoning to the meatball mixture.
  • Serve with a side salad for a complete meal.
