  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can (14 oz) coconut milk
  • 2 cups noodles of choice
  • 1 cup bell peppers, sliced
  • 1 cup spinach, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 2 green onions, sliced

Instructions

  1. In a pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and ginger, sautéing until fragrant.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the vegetable broth and coconut milk.
  5. Bring to a boil, then add the noodles and bell peppers.
  6. Cook until the noodles are tender.
  7. Stir in the spinach, soy sauce, and lime juice.
  8. Serve hot, garnished with green onions.

Notes

  • Adjust the spice level by adding more or less red curry paste.
  • For extra protein, add tofu or chicken.
