Easy Mediterranean Steak & Quinoa Bowl

A delicious and healthy Mediterranean-inspired steak and quinoa bowl that is easy to prepare and packed with flavor.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 pound steak (sirloin or flank)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Rinse the quinoa under cold water and combine it with water in a saucepan.
  2. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
  3. In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. Coat the steak with the spice mixture and grill or pan-sear to desired doneness.
  5. Let the steak rest, then slice into strips.
  6. In a serving bowl, layer cooked quinoa, sliced steak, cherry tomatoes, cucumber, feta cheese, and parsley.
  7. Drizzle with additional olive oil or lemon juice if desired.

Notes

  • This dish can be served warm or cold.
  • Feel free to add other vegetables like bell peppers or olives.
