- 1 cup quinoa
- 2 cups water
- 1 pound steak (sirloin or flank)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- Rinse the quinoa under cold water and combine it with water in a saucepan.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed.
- In a bowl, combine olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Coat the steak with the spice mixture and grill or pan-sear to desired doneness.
- Let the steak rest, then slice into strips.
- In a serving bowl, layer cooked quinoa, sliced steak, cherry tomatoes, cucumber, feta cheese, and parsley.
