Easy Bakery Style Pistachio Muffins with Pudding Mix

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 box (3.4 oz) instant pistachio pudding mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pistachios

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and pudding mix.
  3. In a separate bowl, mix together the oil, eggs, milk, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just blended, then fold in the chopped pistachios.
  5. Fill the muffin cups about 2/3 full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra touch, sprinkle some additional chopped pistachios on top before baking.
  • These muffins can be served warm or at room temperature.
