Dairy-Free Mexican Street Corn Quinoa Salad

A refreshing and flavorful dairy-free quinoa salad inspired by Mexican street corn.

Ingredients

  • 2 cups corn, fresh or frozen
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt

Instructions

  1. Cook the quinoa according to package instructions and let it cool.
  2. In a large bowl, combine quinoa, corn, bell pepper, avocado, red onion, and cilantro.
  3. In a small bowl, whisk together lime juice, olive oil, chili powder, and salt.
