- 10 sheets lasagna noodles
- 2 cups fresh spinach
- 2 cups mushrooms, sliced
- 1 cup ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1 cup Parmesan cheese, grated
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
- Add mushrooms and spinach; cook until mushrooms are tender and spinach is wilted.
- In a mixing bowl, combine ricotta cheese, half of the mozzarella, half of the Parmesan, cream, and Italian seasoning. Season with salt and pepper.
- Spread a thin layer of the cheese mixture on the bottom of a baking dish.
- Layer 3 lasagna noodles on top, followed by a portion of mushroom and spinach mixture.
- Repeat the layers, finishing with a layer of noodles topped with remaining cheeses.
- Bake for 30-35 minutes or until bubbly and golden brown.
- Let it cool for a few minutes before slicing and serving.
