  • 2 cups fresh spinach
  • 8 ounces mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large pot, cook the gnocchi according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add sliced mushrooms to the skillet, cooking until they are golden brown.
  4. Stir in the heavy cream, salt, black pepper, and nutmeg. Bring to a simmer.
  5. Add the cooked gnocchi and fresh spinach. Stir until spinach is wilted and everything is well combined.
  6. Remove from heat and stir in Parmesan cheese until melted and creamy.
  7. Serve hot, garnished with additional Parmesan if desired.
