- 1 pound boneless, skinless chicken breasts
- 1 cup wild rice, rinsed
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup diced carrots
- 1 cup diced celery
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Sauté until softened, about 5 minutes.
- Add the garlic, thyme, salt, and pepper. Cook for another minute.
- Add the chicken broth and wild rice. Bring to a boil, then reduce heat and simmer covered for 30 minutes.
- Add the chicken breasts to the pot. Cover and cook for an additional 15-20 minutes until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the heavy cream and fresh parsley. Cook for another 5 minutes and serve hot.
