  • 1 pound boneless, skinless chicken breasts
  • 1 cup wild rice, rinsed
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Sauté until softened, about 5 minutes.
  2. Add the garlic, thyme, salt, and pepper. Cook for another minute.
  3. Add the chicken broth and wild rice. Bring to a boil, then reduce heat and simmer covered for 30 minutes.
  4. Add the chicken breasts to the pot. Cover and cook for an additional 15-20 minutes until the chicken is cooked through.
  5. Remove the chicken, shred it, and return it to the pot.
  6. Stir in the heavy cream and fresh parsley. Cook for another 5 minutes and serve hot.
