  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until soft.
  2. Add the minced garlic and cook for an additional minute.
  3. Stir in the shredded chicken, enchilada sauce, chicken broth, black beans, corn, cumin, and chili powder. Bring to a simmer.
  4. Cook for about 15 minutes, allowing the flavors to meld.
  5. Lower the heat and stir in the heavy cream and shredded cheese until melted.
  6. Season with salt and pepper to taste.
