Cream Cheese Filled Pumpkin Bread

  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 8 oz cream cheese
  • 1/3 cup powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, sugar, and oil.
  3. Add eggs one at a time, mixing well after each.
  4. In another bowl, combine flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add dry ingredients to wet mixture until just combined.
  6. In a separate bowl, blend cream cheese and powdered sugar until smooth.
  7. Pour half of the pumpkin batter into a greased loaf pan.
  8. Spoon cream cheese mixture over batter, then pour remaining batter on top.
  9. Bake for 60-70 minutes or until a toothpick comes out clean.
  10. Let cool before slicing.

Notes

  • For a richer flavor, add walnuts to the batter.
