Coconut Chicken and Rice

A delicious and comforting dish that combines tender chicken with creamy coconut rice.

  • 1 pound chicken thighs
  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon ginger, minced
  • 3 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large skillet, heat some oil over medium heat. Add the chicken thighs and cook until browned.
  2. Remove the chicken and set aside. In the same skillet, add garlic and ginger, cooking until fragrant.
  3. Add the jasmine rice, coconut milk, chicken broth, soy sauce, lime juice, salt, and pepper. Stir to combine.
  4. Place the chicken back into the skillet. Bring to a simmer, then cover and reduce heat to low. Cook for about 20 minutes, or until rice is tender and chicken is cooked through.
  5. Stir in fresh cilantro before serving.

Notes

  • For extra flavor, marinate the chicken in soy sauce and ginger beforehand.
