- 1 pound chicken thighs
- 1 cup jasmine rice
- 1 can (13.5 oz) coconut milk
- 2 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon ginger, minced
- 3 cloves garlic, minced
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
- In a large skillet, heat some oil over medium heat. Add the chicken thighs and cook until browned.
- Remove the chicken and set aside. In the same skillet, add garlic and ginger, cooking until fragrant.
- Add the jasmine rice, coconut milk, chicken broth, soy sauce, lime juice, salt, and pepper. Stir to combine.
- Place the chicken back into the skillet. Bring to a simmer, then cover and reduce heat to low. Cook for about 20 minutes, or until rice is tender and chicken is cooked through.
- Stir in fresh cilantro before serving.
Notes
- For extra flavor, marinate the chicken in soy sauce and ginger beforehand.
