  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/4 cup chopped pecans

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the bananas with a fork until smooth.
  3. Add the melted butter to the mashed bananas and mix well.
  4. Stir in the baking soda and salt.
  5. Add sugar, egg, and vanilla extract to the mixture and mix until combined.
  6. Gently fold in the flour until just incorporated.
  7. In another bowl, mix the brown sugar, cinnamon, and chopped pecans.
  8. Pour half of the batter into the prepared loaf pan, sprinkle with half of the cinnamon mixture, then pour the remaining batter on top.
  9. Sprinkle the rest of the cinnamon mixture on top.
  10. Bake for 60-65 minutes or until a toothpick comes out clean.
  11. Let cool before slicing and serving.

Notes

  • For extra moisture, use very ripe bananas.
  • This bread can be frozen for up to 3 months.
