Chicken Coconut Red Curry Soup

  • 1 can coconut milk
  • 2 cups chicken broth
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 bell pepper, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups spinach
  • 1 lime, juiced
  • 2 tablespoons cilantro, chopped

Instructions

  1. In a large pot over medium heat, sauté the onion, garlic, and ginger until fragrant.
  2. Add the red curry paste and stir for another minute.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the chicken breast and cook until fully cooked, about 15 minutes.
  5. Stir in the coconut milk, bell pepper, and fish sauce, and cook for another 5 minutes.
  6. Remove from heat and mix in spinach and lime juice.
  7. Garnish with cilantro before serving.
