Cheesy Chicken and Chile Enchiladas

  • 2 cups cooked shredded chicken
  • 1 cup green chile enchilada sauce
  • 1 cup sour cream
  • 2 cups shredded cheese
  • 8 tortillas
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, sour cream, garlic powder, salt, and pepper.
  3. Spread a layer of enchilada sauce at the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the tortillas and sprinkle with cheese.
  6. Bake for 20-25 minutes until the cheese is melted and bubbling.
