Butternut Squash Soup

A deliciously creamy butternut squash soup that warms you from the inside out.

Ingredients

  • 2 cups butternut squash, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 cup coconut milk
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, sauté onions and garlic until soft.
  2. Add butternut squash, ginger, and cinnamon. Stir well.
  3. Pour in vegetable broth and bring to a boil.
  4. Simmer for 20 minutes until squash is tender.
  5. Blend the soup until smooth.
  6. Stir in coconut milk, and season with salt and pepper.

Notes

  • For added flavor, roast the squash before adding it to the soup.
  • Garnish with croutons or pumpkin seeds.
