Broccoli Potato Cheese Soup

The perfect comfort food that’s creamy, cheesy, and packed with healthy broccoli and potatoes.

Ingredients

  • 2 cups broccoli florets
  • 2 cups diced potatoes
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 chopped onion
  • 4 cups vegetable broth
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add diced potatoes and broccoli florets. Stir to combine.
  3. Pour in the vegetable broth and bring to a boil.
  4. Reduce heat and let simmer until potatoes are tender.
  5. Use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender.
  6. Stir in the milk, shredded cheddar cheese, garlic powder, salt, and pepper. Cook until the cheese has melted.
  7. Serve warm, garnished with additional cheese if desired.

Notes

  • For extra creaminess, substitute part of the milk with cream.
  • Can add cooked bacon for a smoky flavor.
