Apple Cinnamon Streusel Muffins

  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 2 cups peeled and chopped apples
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 2 tablespoons cold butter

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together the melted butter, eggs, and milk.
  4. Combine the wet ingredients with the dry ingredients and fold in the chopped apples.
  5. In a small bowl, mix together the brown sugar, flour, cinnamon, and cold butter until crumbly for the streusel topping.
  6. Fill each muffin cup with batter and sprinkle streusel on top.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before serving.

Notes

  • For added flavor, you can sprinkle some walnuts or raisins into the batter.
  • Replace the apples with pears for a different twist.
