Zucchini Banana Muffins with Oats

  • 1 cup mashed bananas
  • 1/2 cup rolled oats
  • 1/3 cup honey or maple syrup
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine mashed bananas with grated zucchini.
  3. Stir in honey and vanilla extract.
  4. In another bowl, mix together the dry ingredients: flour, oats, baking powder, baking soda, cinnamon, and salt.
  5. Combine the wet and dry ingredients until just mixed.
  6. Pour the batter into a greased muffin tin.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool before serving.
