Winter Minestrone & Garlic Bruschetta

Warm up your winter nights with a hearty bowl of Winter Minestrone paired with crispy Garlic Bruschetta.

Ingredients

  • 8 slices turkey bacon
  • 1 medium onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 6 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained
  • 2 cups chopped kale
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups pasta (your choice)

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and chop.
  2. In the same pot, sauté onion, carrots, and celery until soft.
  3. Add garlic and cook until fragrant.
  4. Stir in diced tomatoes and vegetable broth, bring to a boil.
  5. Add beans, kale, thyme, oregano, and pasta. Cook until pasta is al dente.
  6. Stir in chopped turkey bacon before serving.

Notes

  • For extra flavor, use homemade broth.
  • Add more vegetables based on your preference.
