- 8 slices turkey bacon
- 1 medium onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 6 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained
- 2 cups chopped kale
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 cups pasta (your choice)
- In a large pot, cook turkey bacon until crispy. Remove and chop.
- In the same pot, sauté onion, carrots, and celery until soft.
- Add garlic and cook until fragrant.
- Stir in diced tomatoes and vegetable broth, bring to a boil.
- Add beans, kale, thyme, oregano, and pasta. Cook until pasta is al dente.
- Stir in chopped turkey bacon before serving.

- For extra flavor, use homemade broth.
