Whole30 BLT Chicken Salad

This Whole30 BLT Chicken Salad adds a delicious twist with turkey bacon and chicken ham, perfect for a healthy meal.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup turkey bacon, cooked and chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1/4 cup mayonnaise (Whole30 compliant)
  • 2 tbsp apple cider vinegar
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup lettuce, chopped

Instructions

  1. In a large bowl, combine the shredded chicken, turkey bacon, tomatoes, and green onions.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, garlic powder, salt, and black pepper.
  3. Pour the dressing over the chicken mixture and mix until well combined.
  4. Chill in the refrigerator for at least 30 minutes before serving.
  5. Serve over a bed of lettuce.

Notes

  • Feel free to substitute the turkey bacon with regular bacon if not following Whole30.
  • This salad can be made ahead and stored in the fridge for a quick meal.
