A delicious and comforting vegetable soup that is easy to make and full of flavor.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 6 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup green beans, chopped
  • 1 cup potatoes, diced
  • 1 cup corn
  • 1 cup peas
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add onions, carrots, and celery. Sauté until softened.
  3. Stir in garlic, thyme, and basil and cook for an additional minute.
  4. Add vegetable broth and diced tomatoes; bring to a boil.
  5. Once boiling, add green beans, potatoes, corn, and peas.
  6. Reduce heat and let simmer for 20-30 minutes until vegetables are tender.
  7. Season with salt and pepper before serving.

Notes

  • Customize with your favorite vegetables.
  • For a spicier version, add red pepper flakes.
