VEGETABLE BARLEY SOUP

A hearty and wholesome vegetable barley soup perfect for any day.

Ingredients

  • 1 cup barley
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1 cup diced tomatoes
  • 2 cups spinach, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until softened.
  2. Add the garlic and cook for another minute.
  3. Stir in the barley, broth, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and let simmer for 30 minutes, or until the barley is tender.
  5. Add the diced tomatoes and spinach, cooking until spinach wilts.
  6. Serve hot and enjoy!

Notes

  • This soup can be made a day in advance and tastes even better the next day.
  • Feel free to add more vegetables as desired.
