- 4 medium zucchini
- 2 cups spinach
- 1 cup ricotta-style tofu
- 1 cup marinara sauce
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- Preheat the oven to 375°F (190°C).
- Slice the zucchini lengthwise into thin strips.
- In a bowl, mix spinach, ricotta-style tofu, nutritional yeast, garlic, Italian seasoning, and salt.
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Take one zucchini strip, add a spoonful of the filling, and roll it up. Place it seam-side down in the baking dish.
- Repeat with the remaining zucchini strips and filling.
- Top with remaining marinara sauce and bake for 25-30 minutes.
- Let sit for 5 minutes before serving.
Notes
- For a spicier kick, add red pepper flakes to the filling.
- Feel free to use any other vegetables in the filling.
