This Tuscan White Bean Soup is a comforting dish made with turkey bacon and chicken ham, perfect for chilly days.

Ingredients

  • 1 tablespoon olive oil
  • 4 slices turkey bacon, chopped
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 cans (15 oz) white beans, rinsed and drained
  • 1 teaspoon dried thyme
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup chopped kale
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add the onion, garlic, carrots, and celery; sauté until vegetables are tender.
  3. Stir in chicken broth, beans, thyme, and tomatoes; bring to a boil.
  4. Reduce heat and simmer for 20 minutes. Add kale and cook for an additional 5 minutes.
  5. Season with salt and pepper before serving.

Notes

  • For a thicker soup, mash some of the beans before adding them to the pot.
  • Feel free to add your favorite vegetables.
