Bacon, Egg, and Potato Hash

A deliciously satisfying breakfast hash featuring turkey bacon, eggs, and crispy potatoes.

Ingredients

  • 4 slices turkey bacon
  • 2 large eggs
  • 2 cups diced potatoes
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove and chop into bite-sized pieces.
  2. Add olive oil to the skillet and heat.
  3. Add diced potatoes and cook until golden brown.
  4. Add onions and bell peppers, cooking until soft.
  5. Make space in the skillet and crack the eggs into the pan. Scramble or fry to your preference.
  6. Stir all ingredients together, add chopped turkey bacon, and season with salt and pepper.
  7. Serve warm.

Notes

  • For a spicy kick, add diced jalapeños.
  • Feel free to substitute regular bacon if preferred.
