The Pioneer Woman’s Twice Baked Potato Casserole

A deliciously creamy and cheesy potato casserole with turkey bacon that brings comfort to any table.

Ingredients

  • 4 large russet potatoes
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked turkey bacon, chopped
  • 1/2 cup green onions, chopped
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Bake the potatoes in the oven for 1 hour, until tender. Let cool.
  3. Once cool, scoop out the insides of the potatoes into a mixing bowl.
  4. Add in sour cream, cheddar cheese, turkey bacon, green onions, milk, butter, garlic powder, salt, and black pepper. Mix until creamy.
  5. Transfer the mixture back into the potato skins or into a greased casserole dish.
  6. Bake for an additional 20-25 minutes until heated throughout and the top is slightly golden.

Notes

  • For a spicy kick, add some jalapeños to the mixture.
  • This dish can be made ahead of time and reheated before serving.
