  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, ginger, cinnamon, nutmeg, baking soda, and salt.
  3. In another bowl, cream together the softened butter and brown sugar until smooth.
  4. Mix in the molasses and egg until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Chill the dough for at least 1 hour.
  7. Roll the dough into balls and place on a baking sheet.
  8. Bake for 10-12 minutes until the edges are set but the centers are soft.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For a spicier cookie, add more ginger or cinnamon.
