  • 1 can coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1 cup bell peppers, sliced
  • 1 cup onions, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 cups spinach

Instructions

  1. In a large pot, heat a bit of oil over medium heat and add the garlic and ginger. Sauté until fragrant.
  2. Add the chicken thighs and cook until browned on all sides.
