Super Easy Chicken & Rice Soup

  • 2 cups cooked chicken, shredded
  • 1 cup long-grain rice
  • 4 cups chicken broth
  • 2 cups vegetables (carrots, celery, onions)
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add garlic, carrots, celery, and onions. Cook until vegetables are tender.
  3. Stir in the chicken broth, rice, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add shredded chicken and cook for an additional 5 minutes.
  6. Serve hot.
