Stuffed Pepper Soup

A warm and filling soup that brings the flavors of stuffed peppers into a cozy bowl. Perfect for a chilly day!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 bell peppers, chopped
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 1 cup rice, uncooked
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the ground beef and cook until browned.
  3. Add the onion and garlic, and sauté until translucent.
  4. Stir in the chopped bell peppers and cook for another 5 minutes.
  5. Add the diced tomatoes, beef broth, rice, Italian seasoning, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the rice is tender.

Notes

  • For a vegetarian version, substitute ground beef with lentils or quinoa.
  • Feel free to add additional vegetables like corn or zucchini for extra flavor.
