  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ⅓ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh strawberries, pureed

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter, then press into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat cream cheese until smooth. Add sour cream and sugar, mixing well.
  4. Add eggs one at a time, mixing on low until combined. Stir in vanilla extract.
  5. Pour half of the cheesecake batter over the crust.
  6. Spread half of the pureed strawberries over the batter, then swirl with a knife.
  7. Pour the remaining batter and repeat with the strawberries.
  8. Bake for 50-60 minutes until set. Let cool, then refrigerate for at least 4 hours before serving.
