Spinach Egg Muffins

Delicious spinach egg muffins with turkey bacon and vegetables, perfect for a healthy breakfast or snack!

Ingredients

  • 1 cup fresh spinach, chopped
  • 4 large eggs
  • 1/2 cup cooked turkey bacon, chopped
  • 1/4 cup bell pepper, diced
  • 1/4 cup onion, diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together the eggs, salt, pepper, and garlic powder.
  3. Add the chopped spinach, turkey bacon, bell pepper, and onion to the egg mixture and stir to combine.
  4. Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  5. Bake for 18-20 minutes or until the muffins are set and slightly golden.
  6. Let cool for a few minutes before removing from the tin.

Notes

  • Can be stored in the refrigerator for up to 5 days.
  • Great for meal prep and can be frozen for longer storage.
