  • 2 cups chicken broth
  • 1 can black beans, drained and rinsed
  • 4 slices turkey bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the chopped turkey bacon and cook until crispy.
  2. Remove the bacon and set aside. In the same skillet, add onions and garlic, and sauté until translucent.
  3. Add the rice to the skillet and stir for a few minutes until lightly toasted.
  4. Next, pour in the chicken broth, black beans, cumin, and smoked paprika. Stir to combine.
  5. Bring the mixture to a simmer, cover, and reduce the heat. Cook for about 20 minutes or until rice is tender.
  6. Once cooked, fluff the rice with a fork and stir in the crispy turkey bacon. Season with salt and pepper.

Notes

  • For a vegetarian option, omit the turkey bacon and add more beans.
  • Feel free to add vegetables like bell peppers or corn for added flavor.
